Chocolate Chip Cookies are like my thing. The thing. My THANG. Ahem.
I think it’s how I scored a pretty good man and I think it’s how we have stayed together for 22 years. Cookies make kids realllllly happy too. I mean, lets face it, who could possibly take me for 24/7/365? Baking cookies makes me tolerable. I get it.
What’s better than a warm chocolate chip cookie, you ask? I’m not totally sure? Maybe winning? Yah, like winning your tennis match, or coming in 2nd in your age group for a road race! Wait…I’m in my mid forties with 4 kids. Winning is when my son says, “Mom, youre awesome, thanks!”, as I hand him a chocolate chip cookie from the sheet pan. Today, at age 43…that’s winning. I think this calls for a new hashtag. #momiswinning
Chocolate Chip Cookies have meaning. They mean:

- (and the ultimate) dont mind all those boxes from amazon, honey, want a cookie?
Honestly, I think chocolate cookies could solve the worlds problems.

So, here they are. My secret to a happy marriage and happy kids. Oh, and world peace.
Chocolate Chip Cookies
- 2 cups plus 2 Tbls Cake Flour
- 1 2/3 cup Bread Flour
- 1 1/2 Tsp. Baking Powder
- 1 1/4 Tsp. Baking Soda
- 1 1/2 Tsp. coarse salt
- 1 1/4 cups (2 1/2 sticks) unsalted Butter, at room temperature
- 1 1/4 cup Brown Sugar, packed
- 1 cup and 2 Tbls. Granulated sugar
- 2 large Eggs
- 2 tsp. Vanilla Extract
- 2 1/2 cups Chocolate discs, or chopped chocolate
- Flaky sea salt, for sprinkling
- coarse sugar for rolling balls of dough in before baking.
Preheat your oven to 350 and line a baking sheet with parchment paper.
In a large mixing bowl whisk together the flour, baking powder, baking soda, and salt.
In the bowl of your stand up mixer with the paddle attachment, beat the butter and sugars until light and fluffy. Scrape down the bowl.
Add the eggs and beat on low until incorporated ~ scrape down the bowl. Yes scrape down the bowl.
Add the flour mixture in two additions, scraping down the bowl in between.
Add the chocolate discs or chunks in two additions. Scrape down the bowl. Yes, again. But now your done.
Using a medium ice cream scoop (if you have one) scoop out balls of dough and roll them in the course sugar and place them on the parchment lined baking sheet at least 2 inches apart.
Push the balls down with your palm very slightly, and sprinkle with flaky salt such as Maldon brand.
Bake for 13-15 minutes until the cookies are lightly golden.
Remove from the oven and allow to rest on the pan for a few minutes before transferring them to a wire rack to cool. But we all know you'll shove one in your face.
