Gotta find some family meals that we all can eat and I'm not pulling my hair out. I'm finally out of the two- different- dinner- funk. Having little ones makes juggling dinner hard! Im pretty sure when their dinner comes in a little pepper, they'll giggle ... or they may just throw it on the floor like my 1 year old did. This one is not only healthy, but EASY. With just a few ingredients, you have dinner_ and possibly a little compact lunch for work. Using Cauliflower rice is my healthy alternative to Rice, but just swap out cup for cup any grain you'd like. Cooked rice, quinoa, faro, would all be delicious in there! Cheese optional...I hate saying that. Cheese should never be optional. When someone says, " Cheese ?" you say, "Duh, yes." Unless your paleo..don't do that.
- 4 Tbsp Olive oil
- 1/2 Yellow Onion Chopped
- 3 Cloves Garlic minced
- 1 tsp Red pepper flakes
- 1 Tbls Fresh Oregano 2 tsp dried oregano if you can't find fresh
- 1 1/2 Pounds Ground Beef I like 80/20 fat ratio
- 1 28 oz. can Crushed Tomatoes, I love Muir Glen Fire Roasted ones here.
- 2 tsp Salt
- 1 tsp fresh ground Pepper
- 1 Handful Fresh Basil, and some for garnish too!
- 6 Peppers Cut around the stem and removed of all seeds and ribs
- 1 Cup Bone broth, Chicken Stock, or wine (doesn't matter which wine~whatever one you're slugging down your gullet
- 3 Cups Cauliflower Rice
- Mozzerella Cheese
In a Large sauce pan, on med heat, add your oil and let it ripple.
Add your chopped onions, and get them cooking and translucent. Add the garlic and crushed red pepper flakes and cook for 1 more minute.
Add your ground beef and break apart in the pan. Mixing in the onion and garlic until cooked ~ about 10-minutes~ It will cook more when we add the tomatoes and the pepper is baked. Salt and pepper to taste.
Add the crushed tomatoes, more salt and pepper, and oregano. Stir well.
Turn burner to medium low and simmer for 10-15 minutes, The sauce will bubble and reduce. Walk away, walk away and fold that laundry, yell at your kids, or drink the whole La Croix before you loose it somewhere in the kids room when you pick up their underwear off the floor. Ok Let's get back to the recipe.
Prepare your peppers in a casserole dish so they are standing straight. Use some balled up aluminum foil and wedge it in between the peppers to help you stand them up straight.
Remove your sauce pan from the heat and let it cool down for a few minutes.
In a large mixing bowl (or right to your pan if it's big enough) Add the Cauliflower Rice to the sauce and mix well. Add your giant handful of chopped Basil and stir in as well.
Add salt and pepper if it needs it.
Fill the peppers to the brim with the beef mix and pour your cooking liquid at the bottom of the casserole dish.
Drizzle the peppers with some olive oil and cover the dish with Aluminum foil
Bake for 45 minutes.
Removed foil and add the cheese to the tops and return to the oven for 10 minutes or until the cheese is melted and a little browned. Serve with the extra sauce and some more torn basil. Yum, Right?
