I don’t even have energy to tell you what has been going on in my life. But if are like me, and want to sing Christmas carols all day, bake cookies, and live in a plume of Confectioner’s sugar….You get it!
Here’s a recipe that makes kids holly jolly! The toasted marshmallows are what really cranks it up a notch.
Hot Chocolate 2.0
- 4 cups Whole Milk, organic
- 1-2 Tbls Organic Sugar
- 1 1/4 Cup Good Quality Dark Chocolate Chips or chunks 60% cocoa or more
- Maldon Sea Salt or other Flake salt
- Kitchen torch ( or you can use broiler )
In a medium saucepan, on medium/low heat, bring milk to just before boiling temperature.
Add the sugar and whisk.
Just as the milk/sugar mixture is about to boil again, remove from heat and add the chocolate chips and mix until smooth and creamy.
* It is important to add chocolate off the heat so that you don't scorch the chocolate.
If you are using the broiler to toast he marshmallows, line a baking sheet with parchment and line up the marshmallows. Set your broiler to high and toast the marshmallows to your desired "toast-ness". Use a spatula to remove and add to the top of the hot chocolate.
Ladle the hot chocolate into mugs and add a pinch of the sea salt.
If using a kitchen torch, add the marshmallows to the mug and torch the marshmallows.
This is where my daughter likes to take it to the next level by adding some caramel drizzle to the top.
